USHIO Launches Japanese Seafood Spring Menu in Singapore

Written by Dania Rae

If you’re searching for Japanese seafood in Singapore, there’s a new seasonal menu worth checking out. USHIO Sumiyaki & Sake Bar has introduced a limited-time Spring Menu that focuses on fresh, in-season seafood from Japan.

Available till 31 May 2026, the menu highlights a selection of Japanese seafood in Singapore through simple, familiar preparations that let the natural flavours of each ingredient come through.

What’s on the Japanese Seafood Spring Menu

The menu is built around three seasonal highlights, each showcasing a different cooking style commonly seen in Japanese seafood dining.

Madai (Red Sea Bream)

A popular spring fish in Japan, Madai is known for its delicate sweetness and clean finish. At USHIO, it’s served as Madai Sashimi (6pcs, S$28++) and Madai Nigiri Sushi (4pcs, S$22++).

The preparation is straightforward, allowing the quality of the Japanese seafood to stand out. However, it also means the dish relies heavily on freshness rather than creativity.

Sawara (Japanese Spanish Mackerel)

Served as Sawara Yaki (S$30++), this grilled dish brings out the fish’s richer, more savoury notes. It’s a classic preparation that delivers depth, though it stays within expected boundaries for Japanese seafood in Singapore.

Wakasagi (Japanese Smelt)

Offered as tempura (6pcs, S$18++), Wakasagi adds a light, crispy element to the menu. It’s easy to eat and balances the meal, but follows a familiar format often seen in Japanese seafood menus.

Overall, the menu leans into sashimi, nigiri, grilled, and tempura styles — a safe and traditional approach that focuses on ingredient quality over innovation.
