Grand Copthorne Brings Back Thai Buffet With Flower Crab Curry, Wagyu Massaman And A One-Night Thai Cultural Showcase

Grand Copthorne Waterfront Hotel Singapore is bringing back its Thailand Flavourscape Buffet from 13 July to 23 August 2026, and this year’s edition goes bigger. Instead of focusing on Phuket cuisine alone, the buffet expands to Bangkok, Southern Thailand and coastal flavours. It is led by a six hands collaboration between Chef Nawamin “Boss” Pinpathomrat, Chef Witoon Kamonphun and Executive Chef David Toh, with a menu that goes beyond pad thai and tom yum to include richer curries, seafood dishes, street food favourites and classic Thai desserts.

What to expect at the buffet

The expanded menu features regional Thai dishes alongside familiar favourites. Signature highlights include Yellow Curry Flower Crab, Wagyu Massaman Curry, Andaman Seafood Curry with Betel Leaves and Grand Tom Yum Goong.

Other dishes include Tom Yum Fried Rice with Prawns, Steamed Seabass with Lime and Chilli, Southern Phuket Style Braised Pork Belly, Pad Thai Goong and Fried River Prawns with Garlic and Pepper. Live stations will also serve Moo Ping Thai Pork Skewers, Thai Boat Noodles and freshly prepared Thai salads.

Desserts include Mango Sticky Rice, Thai Tea Mousse Cake, Pumpkin Custard, Thai Crispy Pancakes and Thai Milk Tea Ice Cream.

Guests visiting on the opening night on 13 July can also enjoy a Thai style Whole Golden Pig served with Nam Jim Jaew, Thai chilli sauce and Thai seafood sauce. The evening will also feature classical Thai dance performances, music from the traditional Khim instrument, Thai inspired pop up stalls and a lucky draw.
