Pan Pacific Singapore is giving its popular Edge buffet a chocolate-themed upgrade this October, adding chocolate-fed Wagyu, cocoa-glazed pork ribs and pasta finished with 75% dark chocolate to its international dinner spread.
Named The Cocoa Connection, the limited-time showcase runs from 1 October to 8 November 2026.
The Edge buffet is serving chocolate-fed Wagyu on weekends
The most unusual addition is the charcoal-grilled chocolate-fed Wagyu beef. Chocolate or cocoa-based ingredients form part of the cattles’ chocolate-enriched feed. According to the hotel, this diet gives the well-marbled beef a subtle sweetness. The kitchen grills the Wagyu over charcoal before serving it with caramelised onion and dark chocolate jus.
Diners who want to try this particular dish should book a weekend dinner, as it will be served only from Fridays to Sundays.

Chocolate also appears in ribs, lamb and pasta
Several savoury dishes use cocoa for its roasted and bittersweet qualities rather than its sweetness. The oven-roasted leg of lamb comes with a cocoa spice rub, while the braised pork ribs receive a dark cocoa and coffee glaze.
Meanwhile, grilled Japanese corn comes with a white chocolate and miso fondue. This pairing balances the creamy sweetness of white chocolate with the salty, fermented flavour of miso.
For a lighter touch, the spinach and ricotta crêpe au gratin uses cocoa crisps as a crunchy finishing accent.
The chocolate-themed desserts range from rich to refreshing
The dessert section explores different cocoa strengths, textures and flavour pairings. Instead of offering several versions of the same chocolate cake, the menu moves from an intense 85% chocolate tart to a lighter cocoa fruit jelly with soursop.
On 2 October 2026, visiting chef José Luis Del Amo will also take over the live station with a one-day-only creation featuring several chocolate textures.
Edge buffet prices
The weekday dinner costs S$108++ per adult, while weekend dinner costs S$118++. The higher weekend price includes access to the chocolate-fed Wagyu.
All prices include free-flow soft drinks. Service charge and prevailing government taxes apply.
