You’ve probably heard of Peking duck, Shanghai soup dumplings, maybe even Sichuan hotpot.
But there’s one Chinese cuisine that rarely leaves its hometown — and most people have never even heard of it.
Tucked along Tanjong Pagar Road is Wenzhou Mansion, a restaurant quietly introducing this under-the-radar style of cooking to Singapore. And on the menu is a dish that feels almost unbelievable the first time you hear it.
The dish: raw marinated swimming crab
The crab used here is flown in fresh, then cleaned, cut, and marinated raw in a light, tangy brine to bring out its natural sweetness.
It’s fully prepared by the kitchen and served in pieces, so you’ll need to use your hands or small tools to pull the marinated meat out from the shell.
The flavour leans clean and lightly seasoned rather than heavy, letting the freshness of the crab come through. It’s not the kind of dish you see often — even in China.

The lunch menu here is surprisingly extensive — close to 60 dishes designed for sharing.
Start with the shredded chicken with jellyfish for something light and refreshing. Don’t skip the char siu made with iberico pork — crisp skin, juicy meat. If you want something comforting, the three-delicacy soup delivers a clean but deeply satisfying broth. For something more rustic, the wheat pancake offers a savoury bite filled with pork and preserved greens.
Why Wenzhou cuisine is so different
Wenzhou is a coastal city by the East China Sea, and its cuisine reflects that. The cooking focuses on freshness, especially seafood, with light broths and gentle techniques like steaming and poaching rather than heavy frying.
It’s a precise style of cooking where small mistakes show, which is one reason it hasn’t spread widely outside China. Even so, it’s starting to gain attention, with places like Shuang Jing Tou recognised in the MICHELIN Guide Wenzhou 2026.
