These Dumplings Go Through More Than 21 Preparation Steps

Part of what makes Joo Chiat Kim Choo stand out is the amount of work involved behind every dumpling.

The bamboo leaves alone go through days of boiling, washing and soaking before they are ready for wrapping. Meanwhile, the kitchen team also spends days preparing the fillings, seasoning the meat and soaking the glutinous rice.

Only after that does the wrapping and steaming begin. In total, the entire process takes more than eight days and involves 21 detailed preparation steps.
